I need help. Im learning all about vegetables and how good they are. I know now that I wasted the first 50 years avoiding them. Now I want to keep trying things. I have a lovely zucchini that I would like to make a zucchini boat with. You know, hollowed out, filled with sausage mixture, baked with a bread crumb topping. I have cooked some Italian sausage with onions and green peppers (smells amazing I might add). I was thinking of adding maybe a can of diced tomatoes. Is there anything else that should go in for a binding agent, like an egg? Do I need to parboil the zucchini before filling it? Help!
