I never thought I would make gluten-free pasta. I made tones of pasta throughout the years, but never gluten-free. Well I did just that this past weekend. I made my own flour out of dried chickpeas, and then made the pasta. Altogether, it was a very different experience working with chickpea flour, but it came together. I need to perfect the balance of the ingredients with more experimenting. This is a great alternative for people who have gluten issues. Also, chickpeas are very high in protein. I made it with a red sauce with grilled eggplant, marinated artichokes, and cilantro. Naturally the taste and texture are different, but not bad.
