I perfected my protein cookie! 3 cups oats 2 Tbsp melted coconut butter 1/4 cup dried tart cherries or raisins 2 Tbsp melted raw almond butter 1 cup water 1 cup canned organic pumpkin 1/2 cup mixture of any combo of raw, chopped nuts such as: walnuts, pecans, sunflower seeds, pistachios 1 Tbsp cinnamon 1/4 cup dark agave 4 scoops vanilla whey protein powder (I use Spirutein) Bake at 375 degrees for 12 min. Makes 34 small cookies! Working on the caloric estimation...stay tuned!
