I stick with Miller Amish Chicken. After a bit of investigation, I think Its a good compromise between wallet-emptying organic/free range brands and the super cheap but hellishly raised chicken seen in that video and others like it. Lots of stores around SE Michigan carry it including Whole Foods where (of course) they repackage it under a different name and jack up the price. The Coleman Natural brand they sell at Costco is even better raised than Miller Amish, as I understand it. I think the most important thing to know about cooking with meat in general is that you dont need to use nearly as much as many people do. Just tonight I made a filling meal for a family of 3 (Including a teenage boy) using only half a pound of ground beef, among the other ingredients. And there was one portion left over for my lunch tomorrow too.
