I tried making a cabbage, carrot, beet and garlic lacto ferment. A few days in, it over-fizzed and I lost a lot of fluid. I went to check on it today (6 days later) and it had a strong ammonia smell when I opened the Fido lid. The smell dissipated when it was open for a few seconds though. I had a baggie filled with water to hold the ferment under the liquid and when I removed iy, the baggie was almost empty -- I lost about 1/2 cup of water into the Fido jar. So my question is ... it is still safe to eat? I tried a little bit -- probably should have checked in with you all before I ate it -- and it is delicious. But is it safe?
