I wanted to tell you more about the tomato photos that I posted last week. Our residents at #TheCenterforDiscovery love ketchup but the kind that most people buy at the store is not very healthy. So the #DepartmentofNourishmentArts (also called #DNA) decided that we would make our own ketchup with tomatoes from our farm. We want to create something with lower sugar that is lacto fermented. This means it will have a probiotic that helps improve GI health. An important part of the diet for our residents is pre and probiotics and fermented foods are a great source because they naturally have a wide variety of good bacteria. So how are we making the ketchup? We make it the normal way: by cooking the tomatoes, cooling the mixture, and then inoculating it with our kraut juice. Right now we are working on perfecting the recipe so that we can be completely ready for when we have our tomato harvest later in the summer.
