I wrestled that tuna out of my freezer, cut off his triple wrap (no freezer burn!) and followed the step-by-step instructions and pictures in “Filleting Tuna for Canning.” extension.oregonstate.edu/fch/sites/default/files/documents/sp_50_739_filletingtunaforcanning.pdf Added vinegar to the water in the pressure canner and there was almost no smell and easy clean up. Next time I will have the fisherman fillet it for me, but now I can brag I did it myself!
