If you have met me in the store, you probably already know how much I love beans and more importantly fiber. I think beans are the perfect food and I wish Americans consumed more of them. Canned beans in particular are so easy! Just be sure to rinse and drain canned beans to remove the excess and unwanted sodium. The following recipe is so fresh and healthy! It is the perfect treat to serve at football parties, end-of-the-summer picnics, and family gatherings. With two varieties of beans, this treat supplies about 10 grams of fiber and 13 grams of protein with a half-cup serving. Enjoy!! Bean Salad Ingredients: 1- 15.5 ounce can black beans, drained 1- 15. 5 ounce can pinto beans, drained 1 cup red bell pepper, diced small 6 scallions, diced small 1 cup whole kernel corn, fresh or frozen 2 teaspoons green chilies, diced, fresh or canned 2 teaspoons garlic, minced 1 teaspoon ground cumin 1 jar Stonewall Kitchen Maple Chipotle Grille Sauce Fresh cilantro Directions: 1. In large mixing bowl, combine beans, peppers, scallions, corn, chilies, garlic, and cumin. Mix well. 2. Add ½ to ¾ cup Maple Chipotle Grille Sauce. Toss to coat evenly. 3. Cover and refrigerate to let flavors blend for at least one hour. Overnight is ideal. 4. Sprinkle with fresh chopped cilantro before serving.
