If you like to cook eggplant, the difference between cooking one that still looks perfect (been in the fridge one or two days), and one that is looking a little worn around the edges (say 7 days), is astronomical. I just learned this week. Night and day. Note to self. (*Fresh is way better, and tender, barely took much time to cook. The older eggplant, tough, took 2 or 3 times longer to cook and get tender.)
