If you normally boil, steam or sauté veggies, try roasting them in the oven. Roasting brings out the sweetness and flavor of almost any veggie. Brussel Sprouts, Asparagus and all kinds of root vegetables are delicious. I roasted eggplant last night and added it to a caponata style pasta sauce.
