Ill throw this up as my first post as its a subject near and dear to my heart. Id heard for years that rice starch was used on ruffs in the Elizabethan period, but have yet to find a scrap of documentary evidence its use or production during our time frame, in England or the continent (imported). I chatted up Ruth Goodman, and she had zip as well. Anyone out there ever see anything about? Wheat seems to have been the go-to starch (from what I can gather), and Ive read of both bluebells and arums as a source. But rice, no.....
