Im really proud of this breakfast. I worked several pans to make this. First I made potato straws. Then I cooked the Hartmanns andouille sausage. Next I caramelized granny smith apple and shallots in a bit of sugar and white balsamic vinegar and added enoki mushroom and crimini mushroom. I made a bed of the apple mixture and topped it with 3 duck egs that I did sunnyside up and finished under the broiler with a thin slice of gruyere cheese on top, place the andouille along side of the eggs and topped it with the potato straws. Garnished with salt, pepper, paprika and parsley flakes. It was fantastic !!
