Interesting article today in the SF chronicle on bakers working in traditional bakeries while suffering from wheat/gluten intolerance. Couldnt imagine it ourselves. Way too risky in my opinion. Why not just work for a GF bakery? There is already a shortage of skilled gluten-free bakers! What do you think? Would you work somewhere that could make you sick even if you thought you could control it?
