What we eat affects the quality of our bloodstream, which is our foundation. Even though a whole natural foods diet is one of the most accessible tools for better physical, mental and social health, it is often the most difficult to attain. These workshops patiently explore what makes that choice for whole natural foods so difficult, while bringing about an environment for healthy eating habits. Preparation of meals is integral to the Ionia day. Growing, harvesting, and preparing food provide the rhythm of life. There are simple, unwritten guidelines to Ionian cooking: make sure that whatever is cooked is fresh, and let the natural, simple flavors stand on their own. The heart of the meal is whole grain. From an early age, the little boys and girls at Ionia begin to absorb the art and love of cooking by watching and helping their elders. Family and community life revolve around the kitchen.
