Irish Stew Recipe Irish Stew Recipe Ingredients: 8 small Lamb Chops Salt and Pepper 1 tablespoon Vegetable Oil Parsley, Bay Leaves, Peppercorns, Thyme, Rosemary 1 lb Potatoes 2 cup finely shredded Cabbage 1 med Onion - chopped 1 lg Leek White thinly sliced 12 small White Onions 1 1/2 cup Celery Stalks - Diced 1 1/2 cup Peas Chopped Fresh Parsley Time: 1 hour 30 min Serves: 4 Irish Stew Recipe Instructions: Season the chops with salt and pepper. Heat oil in saucepan wide enough to hold all chops. Brown on both sides. Drain off any melted fat and add water to cover chops. Bring to the boil and then add parsley, bay leaf, peppercorns, thyme and rosemary enclosed in a cheesecloth. Reduce heat and simmer. Quarter the potatoes then add potatoes, cabbage, onion, well-rinsed leek, white onions and celery to chops and liquid. Simmer 20 minutes then put the peas in. Put more water if needed during cooking. Simmer 10 minutes more or until potatoes are tender. Irish Stew Recipe Cooking Time: Cooking time is 1 hour 30 minutes. Allow to cool before serving. Irish Stew Recipe Serving Instructions: Garnish with parsley. Serve with fresh Vegetables and Bread of your choice.
