It is the season for zucchini and we have been blessed with plenty on our table. While they are great steamed with a little bit of oil and seasonings, our family can soon grow tired of this. One of the ways I used the zucchini this week is in zucchini patties. 3 tablespoons olive oil 3 cups peeled and shredded zucchini 3 large eggs 1 cup shredded cheddar cheese Salt A slice of cheese for each patty (any type will do) Heat the oil in a large frying pan over medium heat. Stir zucchini, eggs, shredded cheese, and salt to taste together in a large bowl. Drop by spoonfuls in the frying pan. As they cook, shape into patties. Fry until golden brown, about 3 minutes on each side. Top with slice of cheese. I found this recipe in an Amish cookbook given to me from a family member.
