Its all about explaining what we see. Lots and lots of that process of science, the testing of explanations in controlled settings, goes into explanations that have graduated to the level of theory. A scientific theory is the best explanation yet, fine tuned by a mountain of research that supports it. Are theories completely correct? No. Do they explain a huge pool of observations? Yes. Think of a(n) hypothesis as someone who just took their initial First Aide class and a theory as a doctor whos been practicing medicine for years. Thats getting at the difference.
