Its make it Sunday Taco meat: Sorry the first pic is upside down but its been one of those days. Heres what you need Crock pot 3lb. bag of chicken 1 jar of salsa 1 package taco seasoning (optional) 1 cup brown, jasmine or even white rice Put the chicken still frozen in the pot, pour the jar of salsa on it. Add about half the taco seasoning and turn on high for four hours. After four hours shred the cooking chicken and add the 1/2 to a 1 cup of rice and cook another hour until the rice is tender and the liquid is about absorbed. Things you can add to the cook. Rotelle peppers and tomatoes. Black beans or pinto beans. This mix freezes very well and makes a ton. You can use it on a healthy whole wheat tortilla, make it on taco salads (one of my favorites with black beans and a little Mullins and taco sauce) It can also be eaten as a stand alone. This is simple and a high protein really low carb recipe. Eating clean doesnt have to be about bland, boring, or not eating the foods we enjoy. You just make better choices. Use some plain Yogurt instead of sour cream, skip the chips, and enjoy life in a healthier way.
