Ive got to tell everyone, I bought a spiral cutter to cut squash, beets, turnips, any solid veggie. It has 4 sizes from spaghetti to a wide ribbon. I used it on half a zucchini yesterday and the other half today. First the ribbon then the spaghetti size. I think I like the ribbon best, it crisped up better in the saute pan. I scrambled an egg then added herbs to it then coated the squash in that mixture and in the pan it went. Topped it off with parmesan cheese, delicious!!! My family can tell you I usually wont eat zucchini because I was force fed it as a kid!!! But Im telling you, if I like it you know its good!! Got the spiral cutter on Amazon for $30 or so. Well worth it so far. Tomorrow Ill try the yellow squash.
