PLUS it is non-dairy, non-egg, non-soy, non-nut, for the allergic or veganish (chocolate chips may have some dairy). Chocolate Cake 1.5 cup of unbleached white flour (plain) .3 cup of powdered unsweetened cocoa 1 tsp baking soda .5 tsp salt 1 cup sugar (white works best) .5 cup vegetable oil (not olive oil, joan, greek olive oil is great but not in cake) 1 cup of water or cooled coffee (decaf would work for kids) 2 tsp vanilla 2 TABLEspoon not teaspoon of vinegar (we use apple cider vinegar or plain white) Mix al ingredients together, except the vinegar. Pour in the vinegar and watch the batter change shade....kids love this part. Bake at 375º F. for 25-30 minutes. It is done when a prodder comes out clean, not gunked with cake.... Frost or not.... Frosting: 2tbsp corn syrup, 2tbsp butter or marg, .5 cup chocolate chips. Microwave on half heat/intensity for 1 or 2 minutes. Mix and spread.... This is quick to make, reliable (can be made into 12 cupcakes) and our all-time favourite.
