Just did awesome Italian meatballs for dinner - all gone, so no photo! But plates were licked clean including fussy 9yo who rarely eats anything out of the SC. Heres what we did: 1 pkt of supermarket meatballs (we used Aldi ones) 1 jar of bolognaise pasta sauce 1 good teaspoon basil pesto 1 cup beef stock 1 can diced tomatoes good sprinkling of both onion and garlic powder 1.5 dessertspoons of sugar Splash of red wine (if you dont use this you wont need as much sugar) Roll meatballs in flour (can leave this out if you want to but it helps the sauce to thicken). Mix all the other ingredients together in a bowl and put a big ladle full on the bottom of the SC. Place meatballs in a single layer in SC and dump the rest of the sauce over the top. I cooked for 4 hours - started on high and turned down to low after an hour. Put a tea towel under the lid for the last couple of hours to help it thicken up. If your meatballs are a bit fatty you might want to skim the fat off the top with a spoon as it comes to the top. Serve with spaghetti. This makes a lot of sauce so you could probably put in more meatballs if you wanted to. So yum and total hit here :)
