Just made a fresh batch of Peanut Butter Chili and it is sooooo GOOOD! This is my personal recipe I created, but feel free to edit to your liking. Peanut Butter Chili Recipe 2lbs Ground Beef 2 large white or yellow onions, any type that is not sweet. 6 Celery sticks 2 alarm chili mix or Lots of chili and cumin about 2 parts chili powder to 1 part cumin, I am very generous but be careful. Make as hot as you like. Salt and Black Pepper to taste. Some times I add Garlic powder, & Tumeric. 16oz Natural Peanut Butter, crunchy or not depending on your preference, I use crunchy. (I like the peanut bits, since I am not using any beans) 2 - 28oz Stewed Tomatoes 2 - 14.5 Diced Tomatoes 16 oz Cooked Peanuts (optional) Make sure they are cooked ahead of time if you use them, otherwise they will be too hard. I no longer use these in my recipe and simply use crunchy peanut butter. Sauté the onions in a little oil about 5mins and then add the Beef, cook some more about 5mins, and then add the celery. After the beef is browned (no more pink) add the tomatoes and spices. Simmer on medium for about 30 mins and then add the peanut butter last, simmer on low another 30 mins. If it is nice and warm the peanut butter melts faster. After done simmering it is ready to serve any time. I suggest playing with the recipe to fine tune to your taste, esp. the spices.
