Just submitted my final beef assignment. London Broil. For the record, I am not a big fan of London Broil. London Broil is not a cut of meat, it is the term used for top round or flank steak. I love using flank steak and find that I can stuff and roll it, infuse it with flavor with dry rubs or wet marinades and it cooks fast. Not so much with the top round steak. My assignment required me to use a wet marinade and broil it. I am also not a fan of broiled beef of any kind. My personal favorite method of cooking steak from flank to fillet is to sear on the stove top and finish in the oven at high heat. I love the caramelization of the meat when I prepare it this way. So here is my final beef assignment. Next...Pork!
