KARHAAHI BIRIYAANI SERVING (4,5) SPICE LEVEL: (LOW TO MEDIUM) INGREDIENTS: (for karhahi) chicken: 1 kg(mine ia almost 900grms) rice: 3 cups onion: 3,4( large) garlic: 9,10 cloves ginger: 3inches piece tomatoes: 4,5 ( medium) green chillies: two (large) salt: 2 tsp red chilles: 1tsp ( flakes) black pepper: 1 tsp termeric: 1 tsp (huldi) cumin seed: 1 tsp( zeera) (whole masala for grinding) corriender pwdr: 1 tsp( sokha dhaniya) cloves: 4,5 ( long) green cardamom: 3,4 ( green ilaichi) star anis: 1( badiyan ka phool) cinamen: 1 inch piece( daar cheeni) (FOR BOILING RICE) Water: 2litres ( boiling hot) cinamin: 2 inches piece salt : 3 tsp black pepper corn: 1 tsp ( sabit kaali mirch) green cardamom: 4,5 ( green ilaichi) bay leaves: 2large ( taiz putta) cloves: 3,4 ( long) cumin seed: 1 tbsp ( zeera) vineger:2 tbsp ( foil or papper towel, zarda rang n slices if one lemon for dhum) METHOD: In a cooking pot ,add onion n cokk untill golden. add chicken into it n cook for 5 minutes. add garlic, ginger, tomaties, green chillies into it one by one.. ( dont add at once, it will lose its original taste) now ad all spices n let it cook until it sets like a gravy form.n turn off flame. METHOD FOR BOILING RICE: Soak rice with boiling hot water atleast for 15 minutes n maximum half an hour to one hour.Wash it thoroughly before cooking or before soaking. Add water into a cooking pan n add all whole spices axcept cumin. cook it for atleast 10 minute then remove all ingredinets n through these out. Now add cumin seeds n vinager into water n let it cook for 5 minutes thn add rice into water n cook until tender. (METHOD FOR DHUM) spead one thick layer of rice n add all gravy masala on it now add all rest of rice on it. now on top spread some sliced lemon. mix zarda colour in little water or milk n pour on top of rice. cover the pan with foil or paper towel n give dhum for 20 minutes. after turning off flame dont remove lid n foil for atleat 15 minutes. after 15 minute open it ur rice will be saparated nicely automatically.. if u will open at once all rice wil stick.. now dish it out n decorate with lemon slice n serve hot with raita n salad.
