Kale, Eggs, and Berries! **I had every intention of using egg whites, but ran out and substituted them for 2 brown eggs instead. -Sauté your oinons, garlic, tomatoes, and peppers in a little olive oil. -Add in a cup of diced kale, and cook down for about 2 minutes. -In the same pan...push your veggies to the side, and add two slices of turkey bacon. -After two minutes or so, remove bacon. Add two lightly beaten eggs. Stir slowly until eggs are cooked, then add back in the bacon (chop it first). :) *Season to taste, but not much is needed. The natural flavors come through perfectly. -Place in a small baking dish, and add cheese and chives, or not. Bake for 5 minutes on 325° degrees. -Feel free to use any cheese you want...would be great with feta as well. I used 2 % sharp cheddar cheese. Very healthy breakfast option!!!
