Kendrick Recruitment now has an Executive Sous Position in a little piece of paradise, an Island based just off Zanzibar. We are looking for a strong Executive Sous Chef to support the Exec Chef in all kitchen management duties and assume responsibility and control when the Executive Chef is absent. This position is all about setting and maintaining high standards which have been set by this internationally recognised company. You will need to have an excellent knowledge on ingredients and the best ways to use them. In this role you will need to control and check all dishes before they leave the kitchen and make personal contact with guests on arrival and throughout their stay and pay close attention to any specific dietary requirements. You will need to provide on-going training for all your team to provide the best experience. You will be working closely with the lodge manager to come up with new ideas in the kitchen and dining situations. An excellent communicator is key to this role; you will need to hold daily meetings with your team to go over the day ahead. You will be responsible for the staff administration for the kitchen, this includes staff roster, leave structure, staff attendance, staff inductions and personnel file management. You will be responsible for all stock orders and stock management, managing food costs with the Executive Chef, work closely with suppliers to ensure best products and prices are obtained for the lodge. You will need to make sure that all equipment is in working condition and meets health and safety requirements To be considered we are looking for someone with a formal culinary qualification and at least 3 years Head Chef Experience in a 5* or equivalent establishment. We are ideally seeking someone with an East African nationality with preferences given to Tanzanian Nationals. The salary offered for this position is $1,500 - $2,000. The tax on salaries there is 30% however you will be part of a scheme called Zanzibar Social Security Fund where you contribute 5% and the company 10% per a month which you can withdraw when you leave.
