Key Lime Cheesecake Pie 1 Pie Crust (either homemade or ready pie pastry) 1 envelope unflavored gelatin 1/2 cup lime juice 1 cup sugar 2 eggs, beaten 6 ounces cream cheese, softened 1/4 cup butter (margarine does not work well) 1 cup whipping cream 1 1/2 teaspoon grated lime peel Preheat the oven to 450 degrees. Prepare the pie crust or ready made pie pastry according to package directions. This is for a 9 pie. Bake for 9 to 11 minutes or until lightly browned; cool. Soften the gelatin in lime juice in a small saucepan for 5 minutes. Stir in the sugar and eggs. Cook over medium heat until the mixture begins to boil stirring frequently; reduce heat. Simmer for 3 minutes, stirring constantly; remove from heat. Cream the cream cheese and butter inn a mixer bowl until light and fluffy. Add the lime mixture, beating until smooth. Chill for 45 minutes, stirring occasionally. Beat the cream in a mixer bowl until stiff peaks form. Fold the cream and grated lime into cooled lime mixture. Spoon into the pie crust. Chill for 2 hours or until firm. Garnish with additional whipped cream and grated lime peel. Yield: 6 to 8 servings NOTE: I have substituted graham cracker crust for traditional pie crust often.
