Kobi chi vadi or Savoury cabbage cake This is a maharashtrian dish and great for this season when good leafy cabbage is available. Below is my take on this traditional dish. Ingredients: 1/2 kg cabbage 50gm shelled green peas 1 medium onion 2 tsps dhania powder 1/2 tsp goda masala(marathi masala) or garam masala ginger hing, salt chilli powder fresh coriander sesame seeds 5-6 tbsp besan Method: Finely dice cabbage and onion. Mix and season with salt and chilli powder. Allow this mixture to sweat for around an hour. Add 1/2 inch grated ginger, dhania powder, masala, hing, salt and some finely chopped coriander. Now add besan to this mix spoon by spoon and mix well. The mixture with besan will soak the excess water. Adjust the amount of besan, till you get a very loose dough kind of consistency. After the mixture is ready, sprinkle generously sesame seeds on top. Bake in an oven at 180 deg. for 30 mins till golden brown. If you have a grill option on your oven turn it on for the last 10 mins and grill till the top is brown. Serve hot with dahi or eat it as is.
