LOUISIANA CRUNCH CAKE 1 box lemon cake mix 1 small box instant lemon pudding mix 1c buttermilk 4 eggs 1 stick salted butter, melted 1T canola oil 1/4c brown sugar 1/4c coconut 1/4c pecan chips grease and flour a tube pan, or a large loaf pan. set aside. in a large bowl, mix first 6 ingredients well. pour half into prepared pan. mix brown sugar, coconut, and pecans. sprinkle half onto batter. top with remaining batter. sprinkle with remaining nut mixture. bake at 350* til toothpick inserted in the center comes out almost clean. DO NOT OVERBAKE! cool in pan 10 minutes, then remove from pan and turn over. serve nut-side up. drizzle with vanilla glaze if desired.
