Last nights food for one. My own creation. Pan fried pork fillet with zucchini and onions on a warm lettuce bed. 1 smallish pork fillet 1 onion roughly cut in pieces 3 sliced zucchinis few lettuce leaves salt and spices to taste Spice the pork fillet to your liking. I used only ready mixed braai sea salt with which I gave the fillet a good rubbing. Fry the fillet for about 8 minutes till almost done in a little bit of olive oil. Add roughly cut onion to the pan and fry further till the fillet is done. Remove the fillet from the pan and add the sliced zucchini. Stir fry further over low heat till the zucchini is tender. In the mean time, add lettuce leafs to boiling water and blanch for one minute. Slice the fillet and serve it on a bed of blanched lettuce with the zucchini and onions and pickled mango.
