Lebanese Lamb And Green Beans Ingredients: 1 lb. cubed lamb (can substitute beef) 1 1/2 c. chopped onion 6 med. tomatoes or( l6 oz. can tomatoes with juice) 3/4 lb. fresh green beans 2 tsp. minced garlic 1/2 tsp. pepper 1/2 tsp. salt 1 tsp. allspice 1 tsp. cinnamon 2 tbsp. olive oil 1 lemon (optional) Directions: Peel and finely chop tomatoes, keeping all juice. Heat olive oil in a dutch oven. Brown lamb in oil. Add onions and cook until tender. Add tomatoes, garlic, pepper, salt, allspice and cinnamon (allspice and cinnamon are secret of middle-eastern flavor). Turn heat to low and simmer for 45 minutes to an hour. (We want the sauce to thicken). Add the green beans and simmer another 25 to 30 minutes. Serve over rice, rice pilaf or bulgur wheat. Squeeze lemon on top. Yield: 4 to 6 servings.
