Lemon Mini Tarts (makes about 48 mini tarts!) 1 box yellow cake mix 1 block cream cheese 1/4 stick melted margarine Mix all together with electric mixer. Dough will be THICK so add enough liquid to be able to mix. I used about 1/3 cup coconut milk. Drop by spoonful into wells of mini muffin pan after spraying with Pam. Cook until done and cool about 1 minute. Dip mini tart shaper into confectioners sugar and press into the tart, making indention. When completely cooled, fill with canned lemon pie filling. If you want to be super creative, stand a little slice of strawberry in the lemon filling. Get creative....think about these in chocolate with cherry pie filling and cool whip Or white cake mix with coconut pie filling! Limitless possibilities and oh so good!
