Lets do a recipe swap of only fast, easy, healthy meals today that we can make when we forget to meal plan. This means it has to be a dinner that you can turn to in an emergency--like when you havent done enough grocery shopping and run out of ideas and time for dinner. I always have a go-to cans of white Albacore tuna, pouches of salmon, frozen veggie burgers, and Amys spinach pizza. My favorite recipe is salmon quesadillas. Ive got it committed to memory and usually just eyeball everything in it, so not sure on measurements except I know 2 packets of salmon make two whole wheat quesadillas for us. Here it is: 2 whole wheat tortillas 2 pouches of salmon (5oz size) 1 Tbsp minced garlic 1.5 Tbsp EVOO Simply Delicious butter spread (or whatever you like to use) Basil and Garlic Pepper to taste Mexican shredded cheese (can use low-fat, but admittedly, I seldom do) Salsa In a frying pan/skillet heat oil and garlic. Add pouches of salmon, basil and garlic pepper. Heat through (sometimes I like to brown my salmon, other times if Im really starving, I just heat it thoroughly for a few minutes). While your salmon is cooking, preheat a griddle for your tortilla shell. Butter one side and place that side down on the heated griddle. Sprinkle cheese on half of the tortilla. Add some of the salmon mixture on top of the cheese, and then top that with a little more cheese (it acts as glue to hold the shell closed). Fold the tortilla in half, covering the salmon and cheese mixture. Brown on both sides. Take off the griddle, put on a plate, cut into wedges and top dip into salsa--DELICIOUS!! :D
