Lisa Howell shares her meatloaf recipe: My family makes a easy Italian Meatloaf: 1-2 lbs Ground Beef (not lean) 1 egg 1 onion, finely chopped 1-2 slices bread (sometimes I like use quick cook oats instead, or breadcrumbs) Handful Italian seasonings, crushed Couple TBS granulated garlic S&P Mix all together & shape into loaf. Place in 9 x 13 pan. No need to grease pan. Pour 1-2 cans (15 oz) Tomato Sauce over top of loaf (depends on how big you make the loaf. I like mine saucy). Bake 350 for 1 hour or until done. I like the tomato sauce on the top of the loaf to get browned. Also, the tomato sauce along the sides of the pan should bubble. Let rest 5-10 min., before serving. Make garlic bread while waiting. Optional: Sauté onions prior to mixing loaf. Wash, dry & halve some potatoes to tuck along the sides of the loaf prior to baking. Yum! Bake the Italian Meat Loaf uncovered. I cook the loaf until meat is well done. You can cut the middle of the loaf to check for desired level of pink.
