Lisas List at 6:10, the tips for a perfect burger. 1. Use a cut of meat with a good amount of fat. Not the most expensive but one with about 15-20% fat. 80/20 ground round is my favorite. 2. Salt and pepper might be the only seasonings you need. And dont flip the burger too many times. Really just once will do. The burger can get tough if you flip it too much. And dont squeeze the burger with your spatula. You just let the delicious juices fall onto the grill. 3. Pack the burger gently when forming it and make a divot in the middle of the patty. I forget why, just trust me on this one. 4. You dont have to have a thousand toppings for your burger. A good sliced Arkansas tomato, sauteed Vidalia onions and maybe two more toppings are perfect. I recommend bleu cheese but bacon is good on everything. 5. Use wet hands to form the patties and the meat wont stick to your hands as much. 6. Keep the burgers cold until youre ready to put them on the grill. 7. Use a hot grill. A low temperature will make the patties stick to the grill. 8. And like a steak, let the burgers rest for about 10 minutes. It finishes the cooking process and lets the juices to redistribute. 9.
