Looking for a healthy alternative to spaghetti? We use a spaghetti squash in place of the noodles. Not only does it eliminate the grains, but it also adds more vegetables! Here is the method we use for preparing spaghetti squash. Spaghetti Squash Spaghetti! 1 spaghetti squash 1 24 oz jar of organic pasta sauce (We use HEB organics) (you can use more or less than 24 oz depending on how many servings you need and how big your squash is – for a medium squash we usually use 1 ½ jars of sauce) 1 can organic tomato paste 1 lb ground turkey Spices to taste Squash: Preheat Oven to 375 degrees. Cut the squash lengthwise in half. In a glass baking dish put enough water to cover the bottom and have small amount standing. Place the squash cut side down in the water and dish and cover with foil. Bake for 45 minutes then turn the squash with the cut side facing up, recover and bake until the squash is soft and easily shreds with a fork. Let cool for 10 minutes. Shred squash with a fork and pull out of skin into a bowl. Sauce: Brown the ground turkey in a medium sauce pan. Remove excess fat if there is any. Add the pasta sauce, tomato paste, and spices of your choice. Stir frequently Serve over the squash like spaghetti
