Lots of people have been asking me What do I do with this? when I give them produce from the garden. So, Ill try to help out a bit and post a few ideas of how to prepare some of what is growing in the garden. First up: ball zucchinis. These are zucchinis that are round instead of long. They should be picked when they are 5-6 in diameter - if they get too large, they get tough skins and a stronger flavor - best for zucchini bread. But, when picked at the right size, they are lovely! My favorite preparation is to slice them in 1 slices cutting out the stem and flower spot. Spread olive oil in a baking dish, lay the zucchini slices in the dish, then drizzle olive oil over them and sprinkle generously with freshly ground black pepper and coarse sea salt. Roast in a 450 oven for about 20-30 minutes. Fabulous! Note: This is really my favorite way to prepare almost any vegetable - just adjust the roasting time as necessary.
