Lovely tasty way to cook lobster. Method, the hardest part is removing the lobster from the shell! This can be done by blanching the lobster in a pan of boiling water for approx 6 minutes, then refresh in a ice water bath this helps the flesh firm up so it can be removed a little easier. Crack the lobster shell and remove the body carefully . You will need. 500g of lightly salted butter , a good pinch of saffron, 200ml of fish stock. Simply warm all the ingredients in a heavy based pan to around 65 -75oc place lobsters into the butter stock and warm gently for approx 10 minutes probing lobsters until just cooked remove from heat and leave to rest before serving. Ideally served sliced with crisp leaves , pickled sushi ginger drizzled with yuzu and wasabi dressing! A super summery lunch!
