Lunch is bacon crusted potato wedges. Tips~ Baking your Russet potatoes directly on the rack in the oven will ensure a more even baking and will crisp up the skin nicely. Wait until potatoes are cool before slicing into wedges. 3 large russet potatoes cut into wedges. Olive oil, salt and pepper For Bacon Topping: 1 pound thick cut bacon, sliced into smaller pieces (freeze the bacon for about 30 minutes to make for easier slicing) 1 egg 1/2 teaspoon pepper 1/2 teaspoon onion powder 1/2 teaspoon garlic powder 1/2 teaspoon smoked paprika 1/2 cup cotija or Parmesan cheese, grated, optional Tips~ Besides potato wedges, the bacon paste could be used on cubed chicken, pork, beef and even shrimp. For Garnish: 6 green onions, sliced 1 cup Mexican crema or sour cream Hot sauce of your choice Directions: 1. Preheat oven to 375ºF. 2. Leave the skins on the potatoes, wash well and dry. Rub potatoes lightly with olive oil and sprinkle with kosher salt. Place an empty baking sheet on the bottom rack of stove in case any oil comes off the potatoes. Place potatoes directly onto rack in oven and bake for 40 to 50 minutes or until fork tender. Rotate potatoes halfway through baking time. 3. While potatoes are baking, rough chop the bacon and transfer to the food processor. Add the egg, pepper, onion powder, garlic powder and paprika. Pulse to process until it turns into a paste. It should look like sausage when you take it out of the casings. Add in the cheese and just pulse to combine. Transfer to a bowl and chill until ready to use. 4. Once potatoes are done, remove from oven and let them cool before slicing into wedges. When ready, preheat oven to 375ºF. Line a baking sheet with foil or parchment paper. Using your hands, take a couple tablespoons of bacon mix and press gently onto exposed potato wedge. Place onto baking sheet and bake for 30 to 35 minutes, turning halfway through baking time. At this point they are pretty much done or you can sprinkle them with a good melting cheese and cook them under the broiler just until cheese melts. Remove from oven and garnish with crema, hot sauce and green onions.
