MANGO JAM (quick before season ends) Ingredients 2 cups mango pulp 1 and ¾ cups sugar Juice of two lemons Zest of a lemon + cardamom seeds and a pinch of cinnamon powder. Method Peel the ripe Mangoes. Remove the seeds. Cut the mangoes into cubes. Avoid mashing it fine. Add sugar and leave for an hour or till the sugar dissolves completely. Leaving the fruit pieces with sugar makes the fruit pieces tender and releases juice. Add lemon juice, cardamom seeds and a pinch of powdered cinnamon powdered. Cook in a non aluminum heavy bottomed vessel on a low flame. Keep stirring the jam often to avoid sticking to the bottom of the vessel. The jam should reduce to about half of the original volume and it should be gel like in consistency. By the time it is done, the jam looks glossy and if you drop it down the ladle, it will collect in the center and fall in blobs.
