Made Vegetables in White Sauce some time back. ..... First you need to blanch the vegetables. I used broccoli, mushrooms, carrots and corns. Blanch all the vegetables separately as corns and carrots take much time to soften. Once done in a wok add 1 tbsp oil and add the vegetables to it then add salt to taste, 1/2 tsp black pepper and oregano. Saute for few minutes. Switch off the gas and keep aside. Keep the water inn which you have blanched the vegetables as this will be used in white Sauce. For white Sauce heat a pan which has a heavy base or non stick. Add 2tbls of butter let it melt then add 2 tbls of plain flour (maida) saute it then add 2 cups of milk slowly and keep stirring it. Once its smooth then add 2 tbls of grated cheese mix well add salt. Be careful while adding salt as cheese also has salt in and if you use the stock of vegetables it also has salt. Use this stock if you think the consistency of sauce is thick. Then add so black pepper and oregano to the sauce. Your white Sauce is ready. Now you can add the vegetables to it. Your dish is ready to serve. Or you can pour the vegetables in a baking dish and pour the sauce on it grate some cheese on it and bake it. It will b baked vegetables in white Sauce.
