Made these for one of the kids to take along to a birthday party. Not gonna lie... these feel and taste decadent... but not a shred of guilt is felt eating one .... well, not by me :) For less sweet brownies, I have provided instructions below as well. Enjoy! ~ Sweet Potato Brownies ~ 4 pastured eggs 5 tablespoons butter or coconut oil, melted 1 teaspoon vanilla 1/2 cup maple syrup, grade B * 3/4 cup cooked sweet potato, mashed (about 1 small potato) 1/2 cup cacao 4 tablespoons coconut flour 1 teaspoon baking soda Pinch of sea salt 1 cup dark chocolate chips Preheat oven to 375F Whisk the eggs, adding he butter, vanilla, maple syrup and sweet potato. Mix in the cacao, coconut flour, baking soda and salt to combine. Batter should be fairly thick. Stir in the chocolate chips. Spoon brownie batter into a parchment paper lined 8 × 8 pan and bake 20 minutes or until a toothpick inserted in comes out clean. Cool 20 minutes before cutting into squares *these are definitely on the rich and sweet side (perfect for birthday parties) so if you prefer them a little less sweet, decrease the maple syrup and chocolate chips to 1/2 cup and use 3 tablespoons of coconut flour, only adding a scant 1/2 tablespoon more to get a thick batter if needed.
