Made this today at our Christ Chapel Autumn Tea...Simple Pumpkin Butter! You will need a crock pot set to low and patience! Cooking time approximately 6 hrs. Ingredients: 30oz of Pure Pumpkin puree. 1 cup unsweetened Natural Apple Juice, 1 and 1/4 cup Granulated Sugar, 2 tsp Cinnamon, 1 tsp Ginger, 1/2 tsp Nutmeg, 1/2 tsp ground Cloves. For added zing if you like that autumn spice flavor add 1 tsp of Pumpkin Pie Spice. Mix all the ingredients together until well blended and cook on low for several hours until the pumpkin butter sticks to the spoon. It will be a deep dark rich color with an amazing aroma. Spoon into clear clean glass jars. Let cool and store in fridge for 6 to 10 days or freeze for up to 6 months! Makes a considerable amount. Enjoy! Its delicious on toast, crumpets, biscuits, bagels, scones or even spooned over homemade vanilla ice cream!
