Make your own Garam Masala spice blend and destroy any curry youve ever had. CUDAS KITCHEN - BOSS CURRY. 1. Always get whole spices. Toast them in a pan till golden and fragrant. Get yourself a 10$ spice grinder, you could also use a mortar and pestle. Grind your spice blend and sift it. Discard any big pieces left in the sifter. Boom! Garam Masala. This is my take- coriander seeds, fennel seed, black peppercorn, whole cinnamon broken up, dried chilli, cardamom, cloves, mustard seed. 2. In a hot pan fry onion and whole cumin seed till onions are translucent, stir in minced garlic and turmeric. Add your beef and a generous amount of the Garam Masala so it starts browning. At this point season with salt and pepper and once the beef has browned a bit add carrots and potatoes. Continue to stir for about a minute. Add water, stock or coconut milk (to make it more rich) i used chicken stock, enough just to cover it. Turn your heat down and simmer until the starches from the potatoes form a rich gravy. Add your green beans till cooked and check your seasoning. You can substitute any vegetable in this dish or add additional favourites. 3. Pat yourself on the back, enjoy! and go teach someone else how to make it. 4. This recipe is just as great vegetarian (add more of your fav veg) squash, yam, cauliflower, chick peas or beans, greens etc. you could also replace the meat with tofu. Lamb, chicken or fish are all great options as well.
