Makes sauce for four: • 2 red capsicums • 2 celery stalks • 1 bag of Romano tomatoes • 2 carrots (peeled) • 2 Tbsps. extra virgin olive oil • 3 cloves garlic • 1 generous handful of fresh basil • Salt • Pepper Slice up all of the veggies and tomatoes into small pieces, the smaller and finer they are the smoother your sauce will be. Next, place all of these ingredients into a pot with the olive oil, salt and pepper, on a medium-high heat. When your pot starts to simmer add your garlic and basil. Continue to simmer until everything is soft and mushing together. Remove from stove top and place into a food processor or blender. Blend until sauce is nice and smooth. This sauce is so simple and so yummy! Variation: If you like it hot, add 2 chilli peppers (sliced) into the pot with the rest of the vegetables and tomatoes.
