Many great points in this 2-year old article by Dr. Mark Hyman. One that stood out for me in particular was this: If we all switched out one meat meal for a vegetarian meal each week, it would be the equivalent of taking half a million cars off the road. Driving a Hummer and being a vegetarian produces less greenhouse gases than driving a Prius and eating factory farmed meat. Yet when the USDA (United States Department of Agriculture) encouraged us to participate in Meatless Mondays, the National Cattlemans Beef Association lobbied the government to retract their recommendation. And they did. Money in politics. Choosing how and what you eat doesnt only have an effect on your individual health, but the health of our entire environment. Seeing as money seems to be the only thing that speaks these days, one of our best change-makers is how we spend ours.
