Maureen Paulson > Microwave: Baked Potatoes wth beans and Cheese. 4 lsrge potatoes 1 x 425g can baked beans Salt and freshly ground black pepper to taste 250ml grated cheddar cheese 10ml chopped fresh herbs 1. Scrub the potatoes and prick them all over with a fork 2. Place the potatoes on a paper towel on the turntable and microwave on high for 6 - 8 minutes until soft, turning halfway. Remove from the microwave. 3. Wrap the potatoes in paper towel and leave to stand for 10 minutes to cool. 4. Halve the potatoes length ways and scoop out some of the flesh with a teaspoon, leaving a thin shell. Mash the flesh and mix with the baked beans. 5. Divide the mixture into 4 portions and fill each potato shell. Arrange the potatoes in the turntable and microwave on high for 2 minutes to heat through. Remove from microwave. 6. Sprinkle each potato with the grated cheddar cheese and garnish with herbs.
