Maureen Paulson>Stir-Fried chicken 4 skinless, filleted chicken breasts, cut into strips 1 onion, chopped 1 glove garlic, crushed 1/2 green pepper, seeded and cut into thin stripd 2 medium carrots, grated 2 sticks celery, cut diagonally 200 g broccoli florets 125 ml chicken stock 15 ml cornflour 30 ml sweet and sour sauce 30 ml been sprouts 1. Heat oil in a frying pan. Add the onion, garlic, green pepper and ginger and fry for 1 minute. Add the chicken strips and fry until the chicken is browned. 3. Add the rest of the vegetables, stirring all the time. 4. Make the sauce by combining the cornflour with the sweet and sour sauce and adding this to the chicken stock. 5. Pour the sauce over the stiir-fry. 6. Stir in the bean sprouts and serve on a bed of hot rice.
