Memories of Kojagiri Poornima are always accompanied by Masala - TopicsExpress

Memories of Kojagiri Poornima are always accompanied by Masala Dudh, Dudh Pohe & Gul Pohe. And to balance these sweet preparations was the ever favorite Batate Pohe. The best part was of course going to the terrace and having dinner outside the house (believe me, that was a treat) on the brightest night of the year. In the recipes below, I have made Masala Dudh in the microwave and used Brown Pohe - a healthier version of the pihe, which tastes as good. So heres wishing all our members a Very Happy Kojagiri Poornima! Recipes 1. Microwave Masala Dudh - Milk 1 cup - Pinch of cardamon powder - Pinch of nutmeg powder - 1 to 1&1/2 teaspoons of sugar - A few strands of saffron - 1/4 tsp chopped nuts Mix all the ingredients except for sugar & microwave on high for 1 minute. The container should be 3 to 4 times the quantity of milk so that it does not overflow Mix thoroughly and continue to repeat for 20 to 30 second intervals of heating followed by mixing for a total of 4 to 5 minutes. Just before serving, stir in the sugar. Serve while still warm. 2. Dudh Pohe - 1 Milk 1 cup - Pinch of cardamon powder - Pinch of nutmeg powder - 1 to 1&1/2 teaspoons of sugar - 3 to 4 tablespoons of pohe Mix all the ingredients except Pohe. Add the pohe in 5 minutes before serving. 3. Gul Pohe - 1 Milk 1 cup - Pinch of cardamon powder - Pinch of nutmeg powder - 1 to 1&1/2 teaspoons of powdered Kolhapuri Jaggery (Gul) - 3 to 4 tablespoons of pohe Mix all the ingredients except Pohe. Add the pohe in 5 minutes before serving. 4. Batate Pohe - - 1 large onion chopped finely - 1 small potato chopped into 1 cm cubes - 1 cup brown pohe - 1/4 cup shelled peas - 1 to 2 green chillies chopped into pieces - 1 stalk curry leaves - 1 tablespoon oil - 1/2 tsp ghee - 1 tsp mustard seeds - 1/4 tsp hing - 1/4 tsp haldi - 1/2 tsp sugar - Juice of 1 lemon - corriander leaves to garnish - Fresh grated coconut to garnish - Sev to garnish - Salt to taste Heat oil, and add mustard seeds. Once these start cackling, add the hing, onions, chillies, curry leaves, peas, haldi, sugar, salt and mix well. Add just enough water to cover these and cover & cook until potatoes are done. Add the lemon juice and the pohe and the ghee and mix well. Cover and cook on sim for couple of minutes more. To serve, garnish with corriander, grated coconut & sev.
