Mexican Wedding Cakes (recipe from Connie Barnick) 1 cup butter ( no substitutions) 1 cup powdered sugar 1/2 cup sugar 2 tsp vanilla or almond flavoring 2 cups flour 1 cup pecans, chopped fine Additional powdered sugar to coat them after baked. Beat butter and sugar, add rest of ingredients. Roll into balls, place on ungreased cookie sheet. Bake 350 for 12 minutes or until bottoms just start to brown. Cool and put in bag of powdered sugar and shake to cover. May need to do that twice to get the nice powdered sugar coating.
